Culinary students tell stories through The Fable Table
Panaji, February 2024- Utilising food and beverage as a means of communication and interaction among diners, culinary students from the Verna-based Kamaxi College of Culinary Arts (KCCA) and Kamaxi Skills recently organised The Fable Table, comprising an elaborate five-course meal at their campus.
“The Fable Table is our interpretation of a Chef’s Table, to tell stories through food and beverage and encourage interaction among the diners. Through this initiative, students garnered a rich learning experience of how a professional kitchen operates, and the finer nuances of curating a cohesive menu. No indulgent meal is complete without beverages and we partner with homegrown brands to deliver a memorable experience to our invitees. This time, we were delighted to have Matinee Gin as our beverage partners,” stated Siddharth Savkur, Chief Executive Officer of the Kamaxi Group.
The Fable Table comprised a five-course dinner menu, executed by the students. Students from KCCA, who are undergoing a three-year degree programme, were given the responsibilities of a Sous Chef in conceiving and spearheading each course, while those from the short-term programmes at Kamaxi Skills were assigned Commis Chef duties and prepared each course under the guidance of the Sous Chefs and faculty members.
Students prepared tomato tea, fruits de mer, fruits de la terre, lazeez murg lipta musallam, orzo with a tian of vegetables, and red wine poached pear cheesecake as part of the carefully curated menu at The Fable Table to facilitate a conversation with food as the medium.
According to Savkur, the diners invited comprised a cross-section of society including doctors, bankers, hospitality professionals, restaurateurs, entrepreneurs, public figures, and entertainers among others.
“The guest list is thoughtfully curated to represent eminent personalities from different walks of life, united in their love for artisanal experiences,” he concluded.
